Pumpkin Spice Soft Cookies
Pumpkin spice should literally become its own season with how popular it has become. There are so many recipes out there for pumpkin spice something!!
Mine have an added bonus tho...they are HEALTHIER than your average pumpkin cookie. Instead of butter and oil and loads of sugar, mine are full of protein and good ingredients that won't make you feel guilty after eating one...or three.
These cookies are great for making Blobs with as well. Some people call them Moon Pies or Whoopie Pies. We call them blobs here in PA...but they are the soft, almost cake like consistency which make great "cookie sandwiches" no matter what you call them.
Ingredients:
1 cup almond butter (or any nut butter, just remember the fat content will change)
1/4 cup almond flour
1 cup 1st Phorm Pumpkin Spice Latte Level 1 Protein
1 Large egg
1/3 cup honey
1/2 cup pumpkin puree (NOT PUMPKIN PIE MIX!)
1 TSP vanilla (optional) 1/2 TSP baking soda
Preheat oven to 350 degrees and line a baking sheet with parchment paper or foil. (I also spray the foil with cooking spray)
In a large mixing bowl, mix together the wet ingredients.
In a separate bowl, mix together the dry ingredients, then mix the wet and the dry together.
Once the batter is mixed, it is somewhat sticky and somewhat like cake mix, so what I did was spray the inside of a measuring spoon (1 Tablespoon) so the mixture doesn't stick to the spoon and you get all the pumpkin-goodness onto the tray.
Spoon onto the tray about 2 inches apart.
Bake for 10-11 minutes. The cookies will be puffy like a blob cookie!!
**DO NOT OVERCOOK THESE!!! They are super easy to over bake and burn!! Set a timer for 5 mins to check them during the first 10-11 min bake. If they are not done set the time for 2 minutes and check them again. They really don't take long to cook, but are very easy to over cook!
These cookies are the BOMB!!! And super hard to not eat the whole batch in one sitting, which is okay because these cookies won't kill the waistline.
